Roast beef with smashed potatoes: the perfect recipe for your family dinner

INGREDIENTS
For 4 people:
800/1000g beef sirloin
1kg of potatoes
Salt to taste
Pepper to taste
Aromatic herbs to taste
Half a glass of white wine
METHOD
1. For the roast beef, you'll need a piece of beef sirloin. Tie the meat well with string, adding some rosemary.
2. Season the meat well with salt and sear it in a hot pan with a drizzle of oil, making sure to brown it on all sides.
3. Towards the end, deglaze with white wine.
4. Then place the meat on a rack and roast in the oven at 220 degrees Celsius for 15 minutes.
5. At the end of cooking, cover the meat with foil for about 15 minutes to redistribute the juices within the fibers.
6. For the side dish, cook some new potatoes for about 30 minutes, then drain them, place them on a baking tray covered with parchment paper, and crush them with a glass.
7. Season them with salt, pepper, aromatic herbs, and extra virgin olive oil.
8. Bake at 200 degrees Celsius for 30 minutes, until they are crispy!
9. Remove the meat from the foil and slice it with a knife; it will be super juicy and tender!
10. Arrange a few slices on the plate, add the hot potatoes, and drizzle with the cooking juices, and there you have it, this fantastic dish is irresistible!
