Oven baked meatballs and potatoes: the perfect recipe for a quick dinner!

Save on the washing up by cooking all your roast ingredients in one dish - perfect for an easy Sunday lunch or simple midweek meal!
INGREDIENTS
For the potatoes:
3 potatoes, chopped;
2 carrots, chopped;
Salt, pepper to taste;
Olive oil.
For the meatballs:
500 g (1 pound) minced meat;
2 cloves garlic, minced;
4 tbsp breadcrumbs;
1 egg;
2 tbsp dill;
1 small onion, chopped;
1 tsp chili flakes;
2 cups tomato sauce;
Salt and pepper to taste.
METHOD
- Preheat the oven to 180C/350F.
- Combine chopped veggies with oil, salt and pepper and bake for 15 minutes.
Meanwhile, make meatballs by combining all of the ingredients listed in one bowl. Form small meatballs with your wet hands. - Place meatballs on top of vegetables and bake for 40 minutes more.
- Pour tomato sauce over the dish, then bake for 5-7 minutes more.
