Chicken and potato donuts: the perfect combination for a quick dinner!

This delectable delicacy is made with a mixture of minced chicken meat and boiled and mashed potatoes. The recipe is perfect for a tasty dinner!

INGREDIENTS

200 g (7 oz) boiled potatoes;

500 g (1 pound) chicken, minced;

120 g (4 oz) flour;

150 g (5 oz) breadcrumbs;

2 eggs;

1 tsp baking powder;

1 ½ tsp pickled jalapeno, chopped;

Salt and pepper;

4 slices mozzarella;

Breadcrumbs and egg wash for coating.

METHOD

Mash boiled potatoes using fork.
Combine mashed potatoes with minced chicken, flour, breadcrumbs, eggs, jalapeno and baking powder. Season with salt and pepper.
Slice mozzarella and cut out circle with a hole inside, like a donut, using glass or cookie cutters.
Wrap chicken mixture around each of the cheese circle, making sure to cover the cheese itself completely.
Dip each meat donut into egg and coat with breadcrumbs.
Cook in a large amount of oil over the low heat for 8-10 minutes.
