Chicken stuffed potatoes: the original recipe to enjoy your dinner!

Just a few ingredients to make a great dinner in no-time!

INGREDIENTS

100g (1 cup) mozzarella+extra for topping;

1 small carrot, chopped;

800g (8) potatoes, peeled and chopped;

1 tbsp parsley;

1 chicken breast;

150g (1 ¼ cup) breadcrumbs;

60g (¼ cup) parmesan;

2 tbsp parsley.

METHOD

Boil potatoes and carrots, drain and mash. Season with salt, pepper, cheese and parsley.
Cut chicken into small pieces.
Mix breadcrumbs with parsley and parmesan.
Cover chicken pieces in breadcrumbs and cook on a pan quickly.
Form 8 bowls using mashed potatoes, then fill them with chicken. Add extra cheese on top and bake at 190C/375F for 15 minutes.
