Potato rolls stuffed with chicken: you've never tried such an original dish!

INGREDIENTS
For the canelloni:
3 potatoes
2 eggs
Salt
Pepper
Cumin
Parsley
Parsley
50g (1/2 cup) of flour
For the filling:
Olive oil
1 onion
1 red bell pepper
1 green bell pepper
350g of chicken breast
Salt
Pepper
30g of cheese
Oil for brushing
Cheese
Parsley
METHOD
1. Peel and grate potatoes and transfer to the bowl. Add the eggs, salt, pepper, cumin, parsley and flour and mix with spatula to combine.
2. Transfer the mixture to the baking tray covered with parchment paper and arrange evenly. Bake in oven at 180°C/360°F for 30 minutes.
3. In a pan add the olive oil, onion, red pepper, green pepper, chicken breast, salt, pepper and cheese and cook for a few minutes until meat are soft and tender. Remove from the heat.
4. Transfer the potato mixture to the cutting board and cut into 6 equal pieces. Arrange the filling on each piece and roll them up.
5. Transfer canelloni to the baking tray covered with parchment paper and brush with olive oil.
6. Arrange cheese on top and parsley and transfer them to the oven. Bake at 180°C/360°F for 20 minutes.
7. Serve canelloni all together on a serving dish.
