Potato Crusted Chicken Cordon Bleu

Ingredients:
2 Large Chicken Breasts
2 slices of Ham
2 Slices of Swiss Cheese
250g Potatoes:
50g Flour
2 Eggs
Salt and Pepper
Oil for frying
Instructions:
Create a hole in the thikk part of the chicken breast with a small knife.
Enlarge this hole with your fingers taking care not to pierce the flesh.
Roll the ham and cheese together to form a cigar shape.
Stuff the rolled ham and cheese in to the hole created in the chicken.
Peel and dice the Potatoes into 5-7mm dice
Season the flour well with salt and pepper.
Dip the stuffed chicken into flour and then in to the eggs.
Then place the chicken into the diced potatoes, ensure a good coating.
Pre heat oven to 180Β°C 350Β°F
Cook the chicken in a hot frying pan for 2-3 minutes a side to get a nice colouration.
Transfer to the oven and cook for 20-25 minutes.
