Chicken breast in a potato crust: how to make it even better in a few steps!

Tender inside and crispy outside, this recipe is a must-try! 

INGREDIENTS
5 chicken breasts;
500 g (1 pound) potatoes;
150 g (¾ cup) cheese;
10 g (1 tbsp) cornstarch;
salt and pepper.
METHOD
  1. Season chicken breasts with salt and pepper on both sides.
  2. Peel and shred potatoes, season with salt, set aside for 5 minutes then squeeze out any excess moisture.
  3. Mix potatoes with cheese and cornstarch.
  4. Place a couple spoonfuls of potato mixture onto parchment, spread out into an even layer and top with chicken breast. Add more potatoes to cover the top of the chicken.
  5. Cook chicken over medium heat for 5 minutes per side or until golden and cooked through.
