Chicken breast in a potato crust: how to make it even better in a few steps!

Tender inside and crispy outside, this recipe is a must-try!
INGREDIENTS

5 chicken breasts;
500 g (1 pound) potatoes;
150 g (¾ cup) cheese;
10 g (1 tbsp) cornstarch;
salt and pepper.

METHOD
- Season chicken breasts with salt and pepper on both sides.
- Peel and shred potatoes, season with salt, set aside for 5 minutes then squeeze out any excess moisture.
- Mix potatoes with cheese and cornstarch.
- Place a couple spoonfuls of potato mixture onto parchment, spread out into an even layer and top with chicken breast. Add more potatoes to cover the top of the chicken.
- Cook chicken over medium heat for 5 minutes per side or until golden and cooked through.
