Polenta cordon bleu

Ingredients
185g Polenta
750g Water
salt
10g Extra virgin olive oil
150g Edamer
180g Cooked ham
3 Eggs
200 Breadcrumbs

Method
Boil the water, add olive oil and some salt. Add polenta and cook for 8 minutes over low heat.
Transfer to a slightly oiled tray and level with a spatula, chill for 30 minutes.
Make polenta disks using a glass. Put 1 slice of cheese on the cutting board, top with ham and again with cheese, cut a circle with glass.
To assemble: top polenta disc with cheese-ham-cheese and with polenta disc.
Dip them in the beaten eggs, them in the breadcrumbs.
Fry for 2-3 minutes per side.
