Eggplant Cordon Bleu: tasty and perfect for any occasion!

Perfect for a tasty dinner!
INGREDIENTS

5 eggplants
250g of cooked ham
Mozzarella cheese
Provolone cheese
Basil leaves
4 eggs
Salt
Pepper
50g (3 tbsp) of parmesan cheese
Flour
Breadcrumbs
Extra virgin olive oil

METHOD
- First, we will cut the eggplants into slices. Then we will add on top of the eggplant piece a baked ham, mozzarella cheese, provolone cheese, basil leaves, and cover with another piece of the eggplant.
- To prepare the egg mixture we will add the eggs, salt, pepper, parmesan cheese and mix them all well together.
- Then we will cover the prepared eggplants with the flour, then transfer them to the egg mixture, and then cover them with the breadcrumbs.
- In baking try to cover with parchment paper sprinkle the olive oil and arrange the eggplants, and cover each eggplant with the olive oil.
- Bake in the oven at 180°C/356°F for 35 minutes until they are golden brown.
