INGREDIENTS
For the dough:
80g (1/4 cup) of water
1 egg yolk
4g (3/4 tbsp) of salt
25g (2 tbsp) of sugar
360g (3 cups) of all-purpose flour
220g (1 cup) of butter

For the filling:
50g of dried cranberries
Rum
350g of apples
25g (1 tbsp) of butter
60g (1/4 cup) of light brown sugar
Cinnamon
Lemon (juice)
10g (1 1/4 tbsp) of cornstarch

METHOD
1. In a small bowl add the water, egg yolk, salt, and sugar and mix to combine.
2. In a mixing bowl add the flour and butter and start to mix with the fingers. Pour the mixed egg yolk and mix. When dough starts to form knead it with hands to obtain compact dough. Wrap in cling film and transfer to the fridge for 30 minutes.
3. In a small bowl add the dried cranberries and rum and set aside for a few minutes.
4. In a pan add the butter, apple pieces, light brown sugar, cinnamon, lemon (juice), and cornstarch and mix until thickened. Remove from the heat and let it cool.
5. After time has elapsed transfer the dough to the working surface and split it into half.
6. Place the parchment paper on the working surface and roll out the one half. With the apple mold press the rolled dough.
7. Place the parchment paper on the working surface and roll out the other half. Cut it into strips.
8. Place 6-7 strips on a working surface and intertwine them. Pierce the dough with the mold to create the top part.
9. Place the bottom part of the apple cookie and spread the filling on top. Close with another part of the dough to obtain an apple shape and press on all sides to close it well.
10. Transfer apple cookies to the pan covered with parchment paper and brush with the egg + milk. Bake in oven at 160Β°C/320Β°F for 35 minutes.
11. Serve apple cookies all together on a serving dish and enjoy.
