Fried eggplant medallions: the creative and streamlined dish!

The Best Fried Eggplant medallions EVER! This is so easy to make at home and so much better than most restaurant versions. 
 
INGREDIENTS
2 eggplants
150g of cheese
100g of ham
4 eggs
20g (1/4 cup) of parmesan cheese
Salt
Flour
Breadcrumbs
Oil for frying

METHOD
  1. Cut the eggplants into slices and start assembling the medallions starting with the cheese on top, then ham and cheese. Cover it with another slice.
  2. Prepare a mixture of eggs by mixing eggs with parmesan and season with salt.
  3. Pass the prepared medallions first into the flour, then into the egg mixture, and then into the breadcrumbs.
  4. Fry medallions in dip oil until they are golden brown on both sides.
