Fried eggplant medallions: the creative and streamlined dish!

The Best Fried Eggplant medallions EVER! This is so easy to make at home and so much better than most restaurant versions.
INGREDIENTS
2 eggplants
150g of cheese
100g of ham
4 eggs
20g (1/4 cup) of parmesan cheese
Salt
Flour
Breadcrumbs
Oil for frying

Oil for frying
METHOD
- Cut the eggplants into slices and start assembling the medallions starting with the cheese on top, then ham and cheese. Cover it with another slice.
- Prepare a mixture of eggs by mixing eggs with parmesan and season with salt.
- Pass the prepared medallions first into the flour, then into the egg mixture, and then into the breadcrumbs.
- Fry medallions in dip oil until they are golden brown on both sides.
