Eggs in purgatory with eggplants: the quick and delicious recipe!

INGREDIENTS

2 eggplants
Olive oil
1 onion
1/2 of pepper
7 cherry tomatoes
250ml (1 cup) of tomato sauce
Salt
Pepper
Herbs
2 cloves of garlic
4 eggs
Cheese

METHOD

Cut the eggplants into small cubes and fry them in a pan with a drizzle of oil until soft.
In a pan fry the onion with the pepper and then add the cherry tomatoes, tomato sauce, salt, pepper, herbs, and garlic and cook for a few minutes.
Add the eggs on top and add the cheese on top. Cover with a lid and cook for about 5 minutes or until the eggs are done.
Remove from the pot and serve.
