Eggplant egg: the really tasty complete dish!

You only need 4 eggs and some eggplants to make the best dinner of your life!
INGREDIENTS

4 eggplants;
4 eggs;
½ red bell pepper, chopped;
½ green bell pepper, chopped;
1 small onion, chopped;
Garlic, minced;
30 ml (2 tbsp) vegetable oil;
1 tomato, chopped;
½ tsp each salt and pepper;
30 g (2 tbsp) cheese;
½ tsp salt;
300 ml (1 ¼ cup) tomato sauce.

30 g (2 tbsp) cheese;

300 ml (1 ¼ cup) tomato sauce.
METHOD
- Cut each eggplant in half and remove the insides on the bottom half to form a cup.
- Mix bell peppers with onion, garlic, tomato, salt, pepper and olive oil.
- Fill each eggplant cup with vegetable mixture halfway, add some cheese and pour the whole egg on top.
- Whisk tomato paste with salt and water.
- Place eggplants into the pan and pour tomato sauce in.
- Cook covered with a lid for 30 minutes.
