Eggplant egg: the really tasty complete dish!

You only need 4 eggs and some eggplants to make the best dinner of your life!

INGREDIENTS
4 eggplants;
4 eggs;
½ red bell pepper, chopped;
½ green bell pepper, chopped;
1 small onion, chopped;
Garlic, minced;
30 ml (2 tbsp) vegetable oil;
1 tomato, chopped;
½ tsp each salt and pepper;
30 g (2 tbsp) cheese;
½ tsp salt;
300 ml (1 ¼ cup) tomato sauce.
METHOD
  1. Cut each eggplant in half and remove the insides on the bottom half to form a cup.
  2. Mix bell peppers with onion, garlic, tomato, salt, pepper and olive oil.
  3. Fill each eggplant cup with vegetable mixture halfway, add some cheese and pour the whole egg on top.
  4. Whisk tomato paste with salt and water.
  5. Place eggplants into the pan and pour tomato sauce in.
  6. Cook covered with a lid for 30 minutes.
