Stuffed eggplants: la light and tasty recipe!

A tasty dinner idea that everyone will love!
INGREDIENTS
2 eggplants
100g mozzarella cheese
100g feta cheese
1/2 yellow bell pepper
1/2 red bell pepper
2 egg whites
2 egg yolks
METHOD
- Cut off the top part of the eggplants. Spread them with oil and bake at 200°C (390°F) for 20 minutes.
- Cut cheese and peppers.
- Fill the eggplants with cheeses, pepper and egg whites, bake for 20 minutes more, add egg yolks on top and bake for 5 minutes.
