Eggplant roll stuffed with tomato and mozzarella: the light version of a unique recipe!

This recipe makes the perfect dinner for the whole family!
INGREDIENTS
INGREDIENTS
2 eggplants
2 tomatoes
50g mozzarella cheese
40g Emmental cheese
2 tbsp breadcrumbs
2 tbsp parmesan
2 garlic cloves
1/2 tsp salt
1/3 tsp black pepper
1/4 tsp chili powder
4 tbsp olive oil
6-8 basil leaves
METHOD
- Cut the eggplants into slices. Layout them onto the baking pan. Bake at 200’C (390’F) for 20 minutes.
- Meanwhile cut tomatoes and cheeses. Mix olive oil with garlic and spices spread it onto the baked eggplants, top with tomatoes, cheeses, and basil leaves. Sprinkle Parmesan and breadcrumbs.
- Wrap it into the roll. Sprinkle with more Parmesan and breadcrumbs.
- Bake for 20 minutes more.
