Eggplant roll stuffed with tomato and mozzarella: the light version of a unique recipe!

This recipe makes the perfect dinner for the whole family!

INGREDIENTS
2 eggplants
2 tomatoes
50g mozzarella cheese
40g Emmental cheese
2 tbsp breadcrumbs 
2 tbsp parmesan 
2 garlic cloves
1/2 tsp salt
1/3 tsp black pepper
1/4 tsp chili powder
4 tbsp olive oil
6-8 basil leaves

METHOD
  1. Cut the eggplants into slices. Layout them onto the baking pan. Bake at 200’C (390’F) for 20 minutes.
  2. Meanwhile cut tomatoes and cheeses. Mix olive oil with garlic and spices spread it onto the baked eggplants, top with tomatoes, cheeses, and basil leaves. Sprinkle Parmesan and breadcrumbs.
  3. Wrap it into the roll. Sprinkle with more Parmesan and breadcrumbs.
  4. Bake for 20 minutes more.
