Tomatoes omelette: the light version of a delicious recipe!

Just a few ingredients to make a delicious dinner in no-time!

INGREDIENTS
1 Tomato
Oil
50g Baby spinach
4 Eggs
60g (¼ cup) Grated cheese
Salt
Pepper

METHOD
  1. Cut the tomatoes into slices.
  2. In a pan put some oil and add tomato slices.
  3. In a bowl add 4 eggs, baby spinach, and grated cheese. Mix and add salt and pepper.
  4. Pour the mixture over the tomatoes in the pan and cook it for 15 minutes. Serve.
