Eggplant roll: a few ingredients for a tasty dish!

Perfect for a quick dinner or lunch!

INGREDIENTS

2 eggplant

Salt

Pepper

Olive oil

Breadcrumbs

Ham

Cheese

METHOD

Cut the eggplant into slices.
Sprinkle them with oil and season with salt and pepper.
Grill the eggplant in a pan, then arrange it on a baking tray.
Arrange the ham and cheese on the eggplant, then make a roll. Sprinkle the roll with oil and bread crumbs.
Bake at 360°F/180°C for 15 minutes until the cheese melts. Serve.
