Cheesy eggplant roll-ups: easy, tasty and quick to prepare!

INGREDIENTSeggplant
Parmesan cheese
ham
provolone cheese
basil
tomato sauce
salt
DIRECTIONS
Prepare the tomato sauce by cooking tomato paste in a pan with some olive oil, garlic, and basil for about 15 minutes. Slice the eggplant into 1cm thick slices and grill them for about 4 minutes on each side. Once cooled, season them with some salt, place a slice of ham, the provolone cheese, and a spoonful of tomato sauce onto the eggplant and roll everything up. Put the roll-ups in a baking pan, top them with tomato sauce, Parmesan cheese, and basil and bake at 180°C for 25 minutes. Serve hot!
