Eggplant and potato puff pastry roll: delicious and easy to prepare!

This is perfect for a quick and tasty dinner!

2 eggplants
Extra virgin olive oil
Salt
500g of boiled potatoes
Parsley
60g (1/2 cup) of parmesan cheese
150g of cooked ham
200g of mozzarella cheese
1 puff pastry roll
Egg yolk and sesame seeds

METHOD
- Cut the eggplants into slices and coat them with a mixture of oil and salt. Transfer them to a baking sheet and bake in preheated oven at 200°C/392°F for 20 minutes.
- In a bowl add the boiled potatoes, extra virgin olive oil, salt, parsley, parmesan cheese, and mash the potatoes mixture until all is well combined.
- Arrange the cling film on the cutting board and start arranging the prepared eggplants one to each other. Add the potato mixture on top and arrange it well. Also, arrange the ham and mozzarella cheese.
- Make a rollout of transparent foil and wrap it in it. Refrigerate for 30 minutes.
- Roll out the puff pastry on a cutting board, and after the time has elapsed, add the eggplant roll to the middle of the dough.
- Cut the pastry on the front and backside and stick to the roll. Also, stick one side of the pastry to the roll. The other side of the roll is cut into the stripes and covered the roll with each stripe.
- Brush with egg and add the sesame seeds on top of the roll. Bake in the oven at 200°C/392°F for 30 minutes.
