Eggplants pastry rolls: a delicious appetizer everyone will like!

INGREDIENTS:
2 eggplants
Salt
Extra virgin olive oil
Cheese
Smoked chicken
Basil
1 roll of puff pastry
Egg + milk
Black sesame seeds
METHOD:
1. Cut the top part of the eggplant and then cut it lengthwise. Transfer to the baking tray covered with parchment paper.
2. Season them with salt and add a drizzle of olive oil. Transfer to the oven and bake at 180°C/360°F for 20 minutes.
3. Arrange the slices on the cutting board and add each slice a piece of cheese, smoked chicken and basil leaf. Roll it out.
4. Unroll the puff pastry on the cutting board and cut it into strips. Then cut it in half.
5. Wrap each eggplant roll into the puff pastry and seal it well on all sides. Transfer them to the baking tray covered with parchment paper.
6. Brush the rolls with the egg + milk and sprinkle with black sesame seeds.
7. Transfer to the oven and bake at 180°C/360°F for 30 minutes, or until they are golden brown.
