Eggplant fritters: easy and quick to make!

They are irresistible!

INGREDIENTS
4 Eggs
2 Eggplants
Olive oil
100g (1 cup) Breadcrumbs
4g (1 tsp) Salt
5g (1 tbsp) Basil
5g (1 tbsp) Baby spinach
Garlic
100g (1/2 cup) Cheese
15g (2 tbsp) Flour
10g (1 tbsp) Parmesan
 
METHOD
  1. Peel the eggplants and cut into squares. Put them in a pot and add water. Cook them for some time.
  2. In a bowl add cheese and parmesan. Add eggs and mix. Add basil, salt and spinach. Mix it well.
  3. In this mixture add cooked eggplants. Mix it well and add breadcrumbs and flour.
  4. Use a spoon to put the mixture in a pan with oil. Fry it and serve.
