Eggplant fritters: easy and quick to make!

They are irresistible!
INGREDIENTS

4 Eggs
2 Eggplants
Olive oil
100g (1 cup) Breadcrumbs
4g (1 tsp) Salt
5g (1 tbsp) Basil
5g (1 tbsp) Baby spinach
Garlic
100g (1/2 cup) Cheese
15g (2 tbsp) Flour
10g (1 tbsp) Parmesan
METHOD
- Peel the eggplants and cut into squares. Put them in a pot and add water. Cook them for some time.
- In a bowl add cheese and parmesan. Add eggs and mix. Add basil, salt and spinach. Mix it well.
- In this mixture add cooked eggplants. Mix it well and add breadcrumbs and flour.
- Use a spoon to put the mixture in a pan with oil. Fry it and serve.
