Eggplant fans with potatoes: a unique dish to surprise your guests!

Ready in 40 minutes, everyone will ask for the recipe!
INGREDIENTS
1 Eggplant (500g/2 cups)
1 tbsp Salt
Filling:
450g (2 cups) Ground beef
2 tsp (14g) salt
1 tsp Pepper
1 Sweet pepper (120g/1 cup)
1 zucchini (250g/1.5 cup)
300g (1.5 cup) Cherry Tomatoes
1 Onion (50g/1 cup)
2 tbsp (30ml) Olive oil
Juice from half a lemon
METHOD
- Prepare the eggplant, wash it, cut it, grate it and leave it on the side to soften.
- Meanwhile, chop the vegetables and prepare the filling. Add salt to the vegetables and add oil, as well as lemon juice.
- Wash the eggplant and make a flower.
- Finely chop the meat and add spices, then stuff the eggplant petals. When everything is ready, bake at 200 degrees, 40 minutes. Enjoy.
