Meat stuffed eggplants: perfect for a quick lunch that everyone will love!

INGREDIENTS
2 Eggplants
200g of Minced meat
1 bunch of Green onion
Salt
Pepper
Oil for frying
Batter:
2 Eggs
100g (1/2 cup) of Yogurt
3g (1/2 tsp) of Salt
50g of Cheese
90g (3/4 cup) of Flour
Pepper
Flour
METHOD
- Add the sticks in the front and back of the eggplant and cut the eggplant into circles. Cut every other circle.
- Add the eggplant pieces to the bowl, salt them, and set them aside for 10 minutes.
- In a bowl add the meat, green onion, salt, pepper, and mix all together.
- In another bowl add the eggs, salt, pepper, yogurt, cheese, flour and combine them all well together.
- Add the meat mixture inside of the eggplant circle and dip it first in the flour and then in the egg mixture.
Fry in deep oil on both sides until golden brown.
