Stuffed eggplant with meatballs: the result is just amazing!

Have you ever cooked eggplant in this way?
INGREDIENTS

600g (4 cups) Minced beef
1 Onion
1 Garlic clove
4g (1 tsp) Salt
4g (1 tsp) Pepper
4g (1 tsp) Cayenne pepper
Parsley
4g (1 tsp) rosemary
20g (3 tbsp) Corn starch
40g (2 tbsp) Tomato paste
50ml (1/5 cup) Water
100g (1/2 cup) Cheese
100g (2/3 cup) Cherry tomato
Oil
4 Eggplants
1 Potato
1 Egg
METHOD
- Cut the eggplants and peel them a little. Take out the middle of them and put them into salted water.
- In a bowl add minced beef, ground onion, salt, pepper, cayenne pepper, garlic clove, corn starch and chopped parsley. Mix and add egg and mix with hand. Make balls of the mixture.
- Put eggplants into the pan and fry them. When they are ready put them in a baking pan and add a little salt and grounded cheese. Put the balls and add tomato paste mixed with water. Add cheese and half of the cherry tomato.
- Around the eggplants add chopped potato and pour a little more tomato sauce. Put the rest of the balls and cheese. Bake at 190C 50 minutes. Serve.
