Meatballs ice tray

Ingredients:
Eggplant cubes:
1 small eggplant, chopped;
2/3 cup ricotta cheese;
1 egg;
2 tbsp parsley, chopped;
¼ cup parmesan cheese;
¼ cup breadcrumbs.
Meatball cubes:
2/3 cup ricotta cheese;
1 egg;
2 tbsp parsley, chopped;
¼ cup parmesan cheese;
¼ cup breadcrumbs.
Meatball cubes:
300 g (10 oz) minced beef;
2 tbsp parsley;
¼ cup breadcrumbs;
1 egg;
¼ cup parmesan cheese;
½ cup mozzarella cheese.
For cooking:
2 tbsp parsley;
¼ cup breadcrumbs;
1 egg;
¼ cup parmesan cheese;
½ cup mozzarella cheese.
For cooking:
1 ½ cup breadcrumbs:
vegetable/canola oil for frying.

Instructions
Grease both ice cube trays with a little bit of vegetable oil.
Sprinkle eggplants with a generous pinch of salt, ix and set aside.
Mix ricotta cheese with egg, breadcrumbs, parsley and parmesan cheese, season with a pinch of salt.
Squeeze excess moisture out of the eggplants and combine with ricotta mixture.
Fill ice cube tray with eggplant mixture and freeze completely.
For the meatball tray add parsley, parmesan, egg, breadcrumbs and salt into the minced meat.
Fill each section of an ice tray with meat 2/3 way. Make a small deepening in the middle and fill it with shredded cheese. Add more minced beef on top to cover the cheese.
Freeze meatball tray completely.
Remove eggplant and meatball cubes from both trays and dredge them in breadcrumbs.
Deep fry for 5-7 minutes. Serve right away with your favorite sauce.
