Colorful Mochi Tray: the perfect way to prepare this international dessert!

Ingredients:
¼ cup sugar;
¾ cup glutinous rice flour;
¾ cup water;
¼ cup potato starch;
pistachio, strawberry, chocolate ice cream.

Instructions
Mix sugar, flour and water together to make a smooth paste. Cover the bowl with plastic wrap and make a few holes in it.
Place the mochi dough into microwave and heat for 1 minute. Stir the dough and cook for 1 minute more. Stir for the last time and cook for 30 seconds.
Put mochi dough onto a cutting board generously coated with potato starch, leave it to cool down a little and sprinkle with more starch on top.
Roll out the dough and place it into an ice cube tray. Using you finger make hollows and fill them with different types of ice cream.
Cover ice cube tray with leftover mochi dough and let it freeze completely.
Flip the tray, cut the dough into cubes and serve.
