Eggplant meatballs: delicious to enrich your dinner!

INGREDIENTS
2 Eggplants
10g (1 tbsp) Parsley
4g (1 tsp) Salt
2g (1/2 tsp) Pepper
50g (4 tbsp) Breadcrumbs
100g (1 1/2 cup) Parmesan
150g (1 cup) Flour
METHOD

METHOD
- Peel the eggplant and save the peel for later. The rest of the eggplant is cut into cubes and put in a pot with water. Cook, it then mashes it.
- In a bowl put the eggs, salt, pepper, chopped parsley, breadcrumbs, and grated parmesan. Mix it and add eggplant. Mix it all well and make an almond shape of a small amount of the mixture.
- Cover it with flour and fry.
- Then repeat the process with the eggplant peel. Serve.
