Heart jam cookies: fragrant and irresistible!

INGREDIENTS
2 eggs
120g (1/2 cup) of sugar
1 lemon (zest)
100ml (1/2 cup) of seed oil
340g (2 1/2 cups) of flour
8g (1/2 tbsp) of baking powder
Strawberry jam
Powdered sugar
METHOD
1. In a bowl add the eggs, sugar, and lemon (zest) and whisk. Add the seed oil, flour, and baking powder and mix with a spatula to combine all well together.
2. When the dough has become firmer, move it onto a floured surface and continue to knead by hand to obtain the smooth and homogeneous dough.
3. Take the dough with your hands and make the small balls (about 40 grams each). Transfer to the baking tray covered with parchment paper.
4. With a glass, crush them to form disks. Press with the index finger to create two small, close, and symmetrical furrows, in order to create a heart shape.
5. Fill the heart-shaped grooves with strawberry jam. Transfer to the oven and bake at 170°C/338°F for 15 minutes.
6. Let them cool after baking, decorate them with powdered sugar, and serve.
