Orange cookies: light and very tasty!

These soft, buttery orange cookies are made from scratch and the result is amazing!
INGREDIENTS
80g (5 tbsp) unsalted butter
60g (4 tbsp) powdered sugar
1g (¼ tsp) salt
1 egg
2ml (½ tsp) vanilla extract
Orange zest
140g (1 cup) cake flour
20g (2 tbsp) almond flour
1g (¼ tsp) baking powder
2 oranges

METHOD
- Cut the oranges into rings. Dry them on a towel.
- In a mixing bowl, pour butter, baking powder, salt, egg, vanilla, and orange peel. Whisk well.
- Sift flour, almond flour, and baking powder on the resulting mixture. Knead the dough. Roll out the dough. Refrigerate for 60 minutes.
- Cut the dough into circles.
- Press the orange rings on the obtained circles.
- Bake at 360°F/180°C for 15 minutes. Serve.
