Orange cookies: light and very tasty!

These soft, buttery orange cookies are made from scratch and the result is amazing!
 
INGREDIENTS
80g (5 tbsp) unsalted butter
60g (4 tbsp) powdered sugar
1g (¼ tsp) salt
1 egg
2ml (½ tsp) vanilla extract
Orange zest
140g (1 cup) cake flour
20g (2 tbsp) almond flour
1g (¼ tsp) baking powder
2 oranges

METHOD
  1. Cut the oranges into rings. Dry them on a towel.
  2. In a mixing bowl, pour butter, baking powder, salt, egg, vanilla, and orange peel. Whisk well.
  3. Sift flour, almond flour, and baking powder on the resulting mixture. Knead the dough. Roll out the dough. Refrigerate for 60 minutes.
  4. Cut the dough into circles.
  5. Press the orange rings on the obtained circles.
  6. Bake at 360°F/180°C for 15 minutes. Serve.
