Super cookie cake: creamy and very tasty!

An easy dessert that the whole family will adore!
INGREDIENTS
3 eggs;
70g (½ cup) cornstarch;
150g (⅔ cup) sugar;
¼ tsp vanilla extract;
700ml (2 ¾ cups) milk;
150g (⅔ cup) mascarpone;
24 cookies;
Powdered sugar.

METHOD
- Whisk 3 eggs with sugar, vanilla and cornstarch. Add milk and place over the low heat.
- Whisking constantly, cook custard for 10 minutes or until thick.
- Pour custard into the bowl, cover with plastic and chill for at least 1 hour or until cooled completely.
- Beat custard with mascarpone until smooth cream forms.
- Layer half of the cookies into a square mold and pour cream on top. Layer another half of the cookies on top and place into the fridge for at least 4 hours.
- Dust with powdered sugar before serving.
