Super cookie cake: creamy and very tasty!

An easy dessert that the whole family will adore!

INGREDIENTS

3 eggs;
70g (½ cup) cornstarch;
150g (⅔ cup) sugar;
¼ tsp vanilla extract;
700ml (2 ¾ cups) milk;
150g (⅔ cup) mascarpone;
24 cookies;
Powdered sugar.

METHOD

Whisk 3 eggs with sugar, vanilla and cornstarch. Add milk and place over the low heat.
Whisking constantly, cook custard for 10 minutes or until thick.
Pour custard into the bowl, cover with plastic and chill for at least 1 hour or until cooled completely.
Beat custard with mascarpone until smooth cream forms.
Layer half of the cookies into a square mold and pour cream on top. Layer another half of the cookies on top and place into the fridge for at least 4 hours.
Dust with powdered sugar before serving.
