Potato omelette: super tasty and very easy to prepare!

A delicious and quick recipe for a tasty dinner!
INGREDIENTS
4 medium potatoes;
40 g (¼ cup) cornstarch;
Salt and pepper;
2 eggs;
4 slices ham;
110g (½ cup) shredded mozzarella.

METHOD
- Shred and rinse potatoes well. Squeeze any excess moisture and mix potatoes with salt, pepper, and cornstarch.
- Whisk both eggs.
- Divide the potato mixture into half and spread each half on an oiled pan evenly. Pour eggs on top.
- Fry potato omelet on both sides for 3-4 minutes per side.
- Place ham and cheese on one of the omelets and cover with another. Cook until cheese has melted and served cut into pieces.
