Potato omelette: super tasty and very easy to prepare!

A delicious and quick recipe for a tasty dinner! 
 
INGREDIENTS
4 medium potatoes;
40 g (¼ cup) cornstarch;
Salt and pepper;
2 eggs;
4 slices ham;
110g (½ cup) shredded mozzarella.
 
METHOD
  1. Shred and rinse potatoes well. Squeeze any excess moisture and mix potatoes with salt, pepper, and cornstarch.
  2. Whisk both eggs.
  3. Divide the potato mixture into half and spread each half on an oiled pan evenly. Pour eggs on top.
  4. Fry potato omelet on both sides for 3-4 minutes per side.
  5. Place ham and cheese on one of the omelets and cover with another. Cook until cheese has melted and served cut into pieces.
