INGREDIENTS FOR THE SHORTCRUST PASTRY
270g all-purpose flour
100g almond flour
150g softened butter
1 egg
2 egg yolks
150g sugar
2 tsp baking powder
Grated zest of 1 lemon
Grated zest of 1 orange
1 tsp vanilla extract
1 pinch of salt
FOR THE CUSTARD
500ml milk
6 egg yolks
150g sugar
50g all-purpose flour
20g potato starch
Zest of 1 lemon
Zest of 1 orange
1 tsp vanilla extract
3 red apples
Apricot jam, as needed
METHOD
Shortcrust pastry:
1. Place the all-purpose flour, almond flour, and baking powder in a bowl. Mix the ingredients with a spoon until evenly combined.
2. In a large bowl, combine the softened butter, sugar, salt, grated lemon zest, grated orange zest, and vanilla extract.
3. Mix the ingredients with a spoon until you obtain a smooth mixture.
4. Add the egg and egg yolks, then mix again until fully incorporated.
5. Add the dry ingredients and mix until you obtain a very soft dough.
6. Knead the dough on a work surface, using a little flour if needed, then shape it into a ball.
7. Wrap the dough in plastic wrap and refrigerate for at least 2 hours.
Custard:
8. Pour the milk, lemon zest, and orange zest into a saucepan. Heat gently without bringing it to a boil, then remove the citrus peels.
9. Place the egg yolks, sugar, and vanilla extract in another saucepan. Whisk by hand until smooth.
10. Add the flour and potato starch, then whisk again until the mixture is lump-free.
11. Gradually pour in the milk, whisking continuously.
12. Place the saucepan over low heat and cook, stirring constantly with a whisk, until the custard thickens and comes to a boil.
13. Remove from the heat and cover the surface with plastic wrap, pressing it directly against the custard. Let it cool.
Assembly and baking:
14. Take the dough out of the refrigerator and roll it out on a floured surface with a rolling pin until it is about 0.5 cm thick.
15. Cut out several discs using a round cookie cutter.
16. Place the pastry discs into greased and floured tartlet tins, pressing the dough firmly against the bottom and sides.
17. Spread one tablespoon of custard inside each pastry shell.
18. Cut the apples into very thin slices and arrange them in a circular pattern over the custard.
19. Brush the surface with a thin layer of apricot jam.
20. Bake in a preheated oven at 180°C (350°F) for about 20 minutes.
21. Once baked, brush the tartlets with another thin layer of apricot jam while they are still warm, then let them cool.
