Dream cookies: very good and very easy to make!

They will melt in your mouth!

INGREDIENTS
400g (3 1/4 cups) all-purpose flour
200g (¾ cup) soft butter
4 eggs yolks
130 g (⅔ cup) sugar
½ tsp vanilla extract
1 tsp spice mix (cinnamon, nutmeg, ginger, cardamom)
Powdered sugar

METHOD
1. Preheat the oven to 180°C/350°F.
2. In a large bowl cream together softened butter, sugar, vanilla, and egg yolks until light and fluffy.
3. In a separate bowl whisk the flour with spices and add to the butter mix. Knead the ingredients until the dough comes together. Cover with plastic and chill in the fridge for an hour.
4. Roll the dough into a rope and cut it into equal pieces. Transfer the cookies onto a parchment-covered baking sheet and bake for 15 minutes.
5. Cover cookies in powdered sugar before serving.
