Orange cookies: they will melt in your mouth!

They will melt in your mouth with every bite. They’re perfectly sweet and have hints of fresh orange juice and zest in every bite.

INGREDIENTS
 400g (3 1/4 cups) all-purpose flour;
 170g (3/4 cup) cold butter;
 a pinch of salt;
 100 g (½ cup) sugar;
 1 egg;
 1 tsp baking powder;
 1 orange (zest);
 1 lemon (zest);
 40ml (3 tbsp) orange juice;
 Powdered sugar;
 Granulated sugar;
 Orange jam.
 
METHOD
  1.  Whisk flour with salt and baking powder.
  2.  Combine cold butter with flour until crumbs form.
  3.  Whisk sugar, orange juice, citrus zest and egg in a separate bowl.
  4.  Pour egg mixture into the butter-flour mixture and knead to combine.
  5.  Wrap the dough in plastic and let sit in the fridge for 1 hour.
  6.  Divide the dough into balls 25 g each. Flatten each ball with your palms, fill the middle with jam and roll again.
  7.  Cover cookie balls with regular sugar first and powdered sugar second.
  8.  Bake for 12-15 minutes at 180C.
