SHRIMP AND MELON SALAD: fresh and light!

INGREDIENTS
Melon
Salt
500g of prawns
45g of arugula (rocket)
Extra virgin olive oil
METHOD
1. Remove the peel and seeds from the melon, then cut it into small pieces.
2. In a saucepan of boiling salted water, blanch the prawns for 5 minutes. Remove from the heat and let them cool.
3. In a bowl, combine the melon pieces with the blanched prawns, arugula, a pinch of salt, and extra virgin olive oil. Mix well to combine.
4. Serve the shrimp and melon salad on a serving dish and enjoy.
