Melon gelo: the fresh and tasty dessert!

INGREDIENTS
1 cantaloupe melon
60g (1/2 cup) of cornstarch
520ml (2 1/4 cups) of cantaloupe juice
60g (1/4 cup) of sugar
Pistachio grains
METHOD
1. To prepare the cantaloupe gelo you have to start by removing the seeds, peel and cutting them into pieces. Transfer the pieces to the food processor and mix to obtain a very fine mixture.
2. Pour the mixed juice into the strainer over the bowl and press with a spoon until it drains well.
3. In a bowl add the cornstarch and pour part of the cantaloupe juice. Whisk to obtain a smooth and homogeneous mixture.
4. Pour the remaining juice into a saucepan and then the mixture of juice and cornstarch prepared earlier. Add the sugar, and mix over medium heat until thickened.
5. Remove from the heat and pour the mixture into the mold. Let it cool completely and then transfer to the fridge for at least 4 hours.
6. After time has elapsed unmold the gelo and transfer it to the serving plate. Sprinkle with pistachio grains and serve.
