Melon cheesecake, a fresh and tasty summer dessert!

Fresh, tasty and light… the perfect summer cheesecake that will make you lose your mind!Ingredients
1 melon
250g whole wheat cookies
120g butter
500ml whipped cream
100g powdered sugar
250g melon yogurt
60ml warm milk
1 gelatin sheet
Directions
Here is how to make it: cut a small melon into two halves, put one-half aside and dice and blend the other half. Crush 250g of whole wheat cookies ( or any type of cookie you prefer) and mix them with 120g of melted butter. Press the crumbs into the bottom of a springform pan to make the base of the cheesecake. In the meantime, prepare the cream: combine the melon yogurt (or plain yogurt) with 500ml of whipped cream and 100g of powdered sugar. Heat up the milk and melt a sheet of gelatin in it. Mix well and add it to the whipped cream and yogurt mixture. Pour half of the cream onto the cookie base, add some pieces of melon and cover with the remaining cream. Smooth out the top and freeze for 4 hours.
Once the 4 hours have passed, slice the other half of the melon into thin slices and arrange them on top of the cheesecake so they make a flower (as seen in the video). Place the cheesecake in the freezer again before serving. Enjoy!
