Zucchini roll: the perfect summertime dish!

This zucchini roll makes a perfect summertime dish and a great way to use up excess zucchini from your garden.

INGREDIENTS

1 large zucchini;

4 egg;

1 small zucchini;

60 g (½ cup) shredded cheese;

250 g (1 cup) ricotta;

Sliced ham.

METHOD

Preheat oven to 180C/350F.
Shred large zucchini and combine it with eggs, cheese, salt and pepper.
Slice small zucchini into thin circles.
Pour zucchini mixture into a baking pan and cover with sliced zucchini on top.
Bake for 20 minutes and leave to cool down.
Cover the roll with ricotta and sliced ham, roll and wrap in plastic. Let sit in the fridge for at least an hour.
Remove plastic and slice before serving.
