Zucchini roll: the perfect summertime dish!

This zucchini roll makes a perfect summertime dish and a great way to use up excess zucchini from your garden.
INGREDIENTS
INGREDIENTS
1 large zucchini;
4 egg;
1 small zucchini;
60 g (½ cup) shredded cheese;
250 g (1 cup) ricotta;
Sliced ham.
METHOD
- Preheat oven to 180C/350F.
- Shred large zucchini and combine it with eggs, cheese, salt and pepper.
- Slice small zucchini into thin circles.
- Pour zucchini mixture into a baking pan and cover with sliced zucchini on top.
- Bake for 20 minutes and leave to cool down.
- Cover the roll with ricotta and sliced ham, roll and wrap in plastic. Let sit in the fridge for at least an hour.
- Remove plastic and slice before serving.
