Tomato zucchini rolls: tasty and quick to make!

INGREDIENTS
1 large zucchini;
360 ml (1 ½ cup) tomato sauce;
1 block mozzarella cheese;
salt and pepper to taste;
sliced basil leaves for serving.

METHOD
- Cut the top and the bottom part of a large zucchini and use mandoline to slice it as thinly and evenly as possible.
- Heat up some olive oil over medium heat and cook zucchini strips for 1 minute on both sides. Transfer to a large plate.
- Cut a block of mozzarella into small logs as wide as zucchini strips.
- Wrap each piece of mozzarella in zucchini.
- Pour tomato sauce into a pan and season if needed. Place zucchini rolls into the sauce and cover with a lid. Cook for 7-9 minutes or until the sauce is bubbly and the cheese has completely melted.
- Serve sprinkled with sliced basil leaves.
