Zucchini roll: a light solution for a quick and easy dinner!

Easy and delicious, with just a few ingredients your dinner will be ready! 
 
INGREDIENTS
6 eggs
2 zucchini (medium), sliced into rounds
30 g (2 tbsp) Parmesan, grated
150 g (2/3 cup) cream cheese
150 g (5 oz) baked ham, sliced
salt to taste
pepper to taste

METHOD
  1. In a bowl whisk eggs with salt, pepper and parmesan, set aside.
  2. Slice zucchini into 2 mm thick rounds.
  3. Arrange zucchini slices onto a baking tray lined with parchment paper.
  4. Pour egg mixture over the slices and bake in the preheated to 180°C/360°F for 20 minutes. Let cool a bit.
  5. Line the tray with an omelette with plastic wrap, turn the tray upside down and remove the parchment paper.
  6. Spread cream cheese over the whole surface of the omelette.
  7. Top with ham slices and roll up the omelette tightly, starting from the longer side.
  8. Transfer to the fridge to chill for at least an hour.
  9. Slice, serve and enjoy!
