Zucchini roll: a light solution for a quick and easy dinner!

Easy and delicious, with just a few ingredients your dinner will be ready!
INGREDIENTS
6 eggs
2 zucchini (medium), sliced into rounds
30 g (2 tbsp) Parmesan, grated
150 g (2/3 cup) cream cheese
150 g (5 oz) baked ham, sliced
salt to taste
pepper to taste
METHOD
- In a bowl whisk eggs with salt, pepper and parmesan, set aside.
- Slice zucchini into 2 mm thick rounds.
- Arrange zucchini slices onto a baking tray lined with parchment paper.
- Pour egg mixture over the slices and bake in the preheated to 180°C/360°F for 20 minutes. Let cool a bit.
- Line the tray with an omelette with plastic wrap, turn the tray upside down and remove the parchment paper.
- Spread cream cheese over the whole surface of the omelette.
- Top with ham slices and roll up the omelette tightly, starting from the longer side.
- Transfer to the fridge to chill for at least an hour.
- Slice, serve and enjoy!
