Zucchini tortillas: a quick solution for a simple and light dish!

INGREDIENTS
700g of zucchini
Salt
Sweet paprika
Garlic powder
Dry oregano
50g (1/2 cup) of breadcrumbs
40g (1/2 cup) of parmesan cheese
2 eggs
90g (1 cup) of cheese

METHOD
  1. Grate the zucchini and transfer them to the bowl.
  2. Add the salt, sweet paprika, garlic powder, dry oregano, breadcrumbs, parmesan cheese, eggs, and cheese, and mix all well together to obtain the compact mixture.
  3. Cover the baking tray with parchment paper and pour for about 2 full spoons to obtain 4 piles. Flatten each one to obtain the tortillas.
  4. Transfer to the oven and bake at 180°C/360°F for 20 minutes.
