Coffee cookies: easy to make and super delicious

INGREDIENTS
50g (1/4 cup) of butter
50g (1/4 cup) of sugar
A pinch of salt
25g of egg
Vanilla essence
90g (3/4 cup) of flour
4g (1/4 tbsp) of baking powder
For the coffee syrup:
2g of instant coffee
7ml of water
7g of egg
METHOD
1. Add the butter, sugar, and salt in a bowl and whisk. Add the egg, vanilla essence, flour, and baking powder and mix with a spatula. When dough starts to form knead it with hands to obtain compact dough.
2. Transfer the dough to the cutting board covered with cling film and cover with another sheet. Roll out the dough with the rolling pin and transfer to the freezer for 1 hour.
3. In a small bowl, combine the instant coffee, water, and egg.
4. After 1 hour make the shapes with the cookie mold and transfer them to the baking tray covered with parchment paper.
5. Brush cookies with the coffee mixture and make the squares with the fork. Transfer to the oven and bake at 180°C/360°F for 15 minutes.
6. Serve them all together on a serving plate and enjoy.
