Fluffy croissants: how to make them in few and simple steps!
published on 16 March, 2023 at 11:00
INGREDIENTS
300g (2 ⅜ cups) all-purpose flour
140ml (½ cup + 1 tbsp) lukewarm milk
7g (2 ½ tsp) dry yeast
30g (2 ½ tbsp) sugar
80g (⅓ cup) condensed milk
60g (4 tbsp) melted butter
1 egg
METHOD
1. In a medium bowl whisk together milk, sugar, and dry yeast. Set aside for 10 minutes.
2. When the liquids foam up, add an egg, condensed milk, and melted butter. Whisk to combine.
3. Finally, add flour with a pinch of salt into the liquids and knead the dough well (at least for 5 minutes) or until smooth and elastic. Cover the bowl of dough and let it rise for 2 hours.
4. Divide the dough into 9 equal pieces, and roll and fold each one out as shown in the video. Finally, roll the dough out into a triangle and roll once again to form a croissant shape.
5. Place each croissant into a 20x20cm square pan and let it rest for 30 minutes.
6. Brush croissants with egg wash before baking for 20-25 minutes at 180°C/350°F.
