Fried croissants: a delicious recipe ready in a few steps!

20g (3 tbsp) fresh yeast;
500g (4 cups) flour;
50g (¼ cup) sugar;
2 egg yolks;
100g (¼ cup+3 tbsp) butter;
a pinch of salt;
220 ml (¾ cup) warm milk;
Jam and hazelnut paste for serving.
METHOD
- Whisk milk with sugar and crumbled fresh yeast.
- Add 2 egg yolks and whisk again.
- Combine liquids with flour and salt. Knead the dough until it comes together. Add softened butter and continue kneading for about 10 minutes or until it becomes very smooth and elastic.
- Cover the dough with plastic and set aside for 1 hour.
- Punch excess air out of the dough and roll out ⅔ of it into a 30x40 cm rectangle.
- Cut the rectangle into triangles. Spread ½ tsp of jam or hazelnut cream on the bottom part of each rectangle.
- Roll the dough up to form croissants. Pinch the edges together well.
- Roll out leftover dough and cut into 3 strips.
- Braid 3 strips of dough, cut into 2 braids and pinch nicely at the ends.
- Preheat oil to 180C/350F. Fry braids for 4-5 minutes and fry croissants for 3-4 minutes, flipping throughout cooking.
- Pass in sugar before serving.
