Passion fruit mousse cake: the recipe for a delicious and creamy dessert

Ingredients: 
 
- For the cocoa sponge cake: 
2 eggs 
60 g of sugar 
52 g of cake flour 
8 g of cocoa powder
20 g of milk 
10 g of seeds oil 
 
- For the passion fruit mousse: 
3 egg yolks 
50 g of sugar 
270 g of milk
300 ml of cream 
10 g of sugar 
60 g of white chocolate 
130 g of unsweetened yogurt 
150 g of passion fruit puree
8 g of sheet gelatin
 
Directions: 
1. For the sponge cake: whisk egg whites gradually adding sugar. Then stir in egg yolks. 
2. Sift and add flour and cocoa powder. 
3. Lastly add milk and oil. 
4. Pour the batter in a baking tray coated with baking paper. 
5. Bake at 190° for 12 minutes. 
6. For the filling: mix egg yolks, sugar and salt in a saucepan. Then add warm milk. 
7. Bring on the stove and bring to a boil. 
8. Now cover with some plastic wrap and refrigerate for 30 minutes. 
9. Aside, whip cream with sugar. Then refrigerate. 
10. Hydrate gelatin by soaking it in water. 
11. Mix yogurt, melted chocolate and passion fruit puree. 
12. Add melted gelatin and whipped cream. 
13. Aside, mix melted chocolate, gelatin and the cream you made before. 
14. Now add half of the whipped cream. 
14. Assemble the cake alternating cake and filling. 
15. Decorate with some yogurt mousse peaks and flowers.
