Fruit cake: the perfect dessert for any occasion!

Our fruity cake recipe transforms seasonal fruits into delicious, moist cakes to enjoy at any time of day.
INGREDIENTS

Biscuit:
7 medium eggs at room temperature
160g (0.8 cup) of sugar
10g (1 tbsp) vanilla sugar
100g (0.8 cup) of sifted flour (Type 550)
100ml (0.46 cup) of oil
White ganache
240g (2.4 cups) white chocolate + 240ml (1 cup) fresh cream
50ml (0.21 cup) condensed milk
100g (0.8 cup) sugar
160g (1.1 cup) mascarpone
600ml (2.5 cups) cold fresh cream
100ml (0.85 cup) mixed whipped cream
Raspberries, blueberries, kiwis, white and black grapes, mangoes, apples, bananas.
22 cm mold and acetate foil.
METHOD
- Separate the egg yolks to the egg whites. Whisk the egg yolks with the sugar, add the oil and flour, combine everything with a mixer. Whisk the egg whites and add the vanilla sugar. Combine the two mixtures and divide the cream into two parts, bake twice in a large pan (40 x 30) at 180 degrees for 20 minutes. Cut two 22 cm crusts and two 18 cm crusts.
- Melt the white chocolate with the fresh cream, whisk the mascarpone with the sugar, add white chocolate, condensed milk and fresh cream.
- Prepare a mold lined with acetate foil, follow the decoration as in the video and arrange the cake.
