Tangerine cake: a wonderful recipe with only 6 ingredients!

Without butter or milk and with fresh tangerines, this cake will be a new family favorite!
 
INGREDIENTS
 2 tangerines (zest and juice only);
 150 g (5 oz) flour;
 150 g (5 oz) sugar;
 4 eggs, separated;
 2 tbsp olive oil;
 1 ½ tsp baking powder.
 
METHOD
  1.  Preheat oven to 180C/350F. Grease bundt cake pan with a little bit of butter.
  2.  Whisk egg yolks with half of the sugar, olive oil, tangerine zest and juice.
  3.  Beat egg whites with leftover sugar until stiff peaks form.
  4.  Combine baking powder and flour. Add dry ingredients into the yolk mixture and stir to make a smooth batter. Fold in stiff egg whites.
  5.  Pour an airy batter into the cake pan and bake for 30-35 minutes. Let cool down before removing from the pan and serving topped with powdered sugar.
