Tangerine cookies: soft and fragrant!

They’re perfectly sweet and have hints of fresh tangerines juice and zest in every bite.
INGREDIENTS
40g (2 tbsp) tangerine peel, chopped
60ml (1/4 cup) tangerine juice
260g (1 1/2 cups) flour
100g (7 tbsp) softened butter
90g (2/3 cup) sugar
1 egg yolk
5ml (1 tsp) vanilla extract
8g (1 1/2 tsp) baking powder
Salt to taste
For coating:
Granulated sugar
Powdered sugar
METHOD
- In a bowl combine softened butter with sugar. Mix well until smooth.
- Stir in tangerine peel, add tangerine juice and mix to combine.
- Stir in egg yolk, vanilla extract and a pinch of salt.
- Add flour and baking powder and mix everything with your hand until you receive an elastic dough. Chill in the fridge for 15 minutes.
- Form the dough into a log shape and divide it into small 20g balls.
- Coat each ball in granulated sugar and then in icing sugar.
- Arrange onto a baking tray lined with parchment paper and bake in the preheated to 170°C/350°F oven for 10-12 minutes. Let cool.
