Rosquillas (Spanish Doughnuts): fluffy and so easy, they are addictive!

You need to get your hand on this! They are excellent with drinking chocolate or milk.
INGREDIENTS
INGREDIENTS
300 g (10 oz) flour;
160 g (5.6 oz) sugar;
2 eggs;
1 lemon (zest and juice only);
50 g (1.7 oz) butter, melted;
¼ cup water;
10 g (0.3 oz) baking powder.
METHOD
- Whisk butter, sugar and eggs together until pale. Add lemon zest, juice and ¼ cup of water.
- Combine baking powder and flour in a separate dish. Mix dry and wet ingredients to form a smooth and thick dough.
- Generously flour the working surface and knead the dough until smooth.
- Cutting off small balls of dough form it into a donut, making sure to grease your hand before forming.
- Heat vegetable oil and fry each donut for 4-5 minutes. Coat in sugar before serving.
