Chicken and cabbage crispy rolls

These Crispy Baked Chicken Spring Rolls are filled with a hearty mix of ground chicken and shredded green cabbage!
Crispy outside and so tender inside, you will love them!

INGREDIENTS
¼ small white cabbage, chopped;
1 chicken breast, cut into small cubes;
2 tbsp dark soy sauce;
1 tsp ginger, minced;
2 garlic cloves, minced;
10 egg roll wrappers;
egg wash;
vegetable oil for frying.
METHOD
- Blanche chopped cabbage in salted water until it is soft.
- Separately cook chicken until it turns white, add garlic, ginger and soy sauce. Cook for couple minutes more to cook the meat trough. Strain from any liquid and leave to cool down with the cabbage.
- Combine cooled cabbage and chicken and place around 1 heaped teaspoon of the filling on the bottom of the wrapper. Brush the sides of the wrapper with egg wash and roll as shown on the video.
- Make sure to roll tightly, without leaving any gaps or air bubbles inside.
- Fry rolls in preheated oil until golden and serve right away with your favorite dipping sauce.
